Apricot Balls
Ingredients
2 cups cashews
1/4 cup coconut
1 tsp vanilla extract
200g dried apricots
1 tbsp coconut oil
extra coconut for dusting
Method
Place cashews, coconut, vanilla and apricots into thermomix. Blend until finely ground (about 1 minute on speed 6)
Add the coconut oil and mix until it comes together.
Roll into small balls and dust with coconut
